  1. 2 c flour
  2. 1/2 c coconut oil
  3. 1/2 c sugar
  4. 1/4 brown sugar
  5. 1/8 c molasses
  6. 1 t vanilla extract
  7. 1/3 c pumpkin puree
  8. 1 3/4 t cinnamon
  9. 1/2 t ginger
  10. 1/4 t nutmeg
  11. 1/8 t cloves
  12. 1/8 t salt
  13. 1 t baking soda
  14. sugar for sprinkling/rolling
  1. Preheat oven to 350 degrees.
  2. In a medium sized bowl, whisk together the gluten free flour, cinnamon, ginger, nutmeg, cloves, baking soda, and salt.
  3. In your mixer, cream the vegan buttery spread and sugars on medium speed until light and fluffy.
  4. Add the molasses, vanilla extract, and pumpkin puree and mix until smooth.
  5. Add the flour mixture to the mixer a little at a time while mixing.
  6. Scoop dough with a small ice cream scoop and place on pan.
  7. Sprinkle with sugar.
  8. Bake for 12-15 minutes.
  1. I only had bread flour, so I used half whole wheat and half white bread flour. I also used coconut sugar in addition to cane sugar.
