For the crust
  1. 3/4 cup graham cracker crumbs
  2. 2-3 Tbsp coconut oil
For the filling
  1. 8 oz cream cheese, room temp
  2. 3/4 cup plain greek yogurt
  3. 3 eggs
  4. 1/3 cup sugar (I used xylitol)
  5. 1/3 cup lemon juice
  6. 1 Tbsp lemon zest
  7. 1 tsp vanilla
  1. Preheat the oven to 300 degrees.
  2. Mix together melted coconut oil and graham cracker crumbs. Press into the bottom of an 8x8 or 9x9 inch pan.
  3. Bake crust for 8 minutes.
  4. Beat the cream cheese in a mixer with whisks.
  5. Add greek yogurt and mix again until smooth.
  6. Next beat in the eggs.
  7. Finally add the sugar, lemon juice, lemon zest and vanilla. Mix until well combined.
  8. Pour into pan and bake for 25-35 minutes, until the center no longer jiggles.
