Ingredients
  1. 1 T oil (safflower)
  2. 2 T garlic, minced
  3. 2 T butter
  4. 8 oz dry pasta (brown rice & quinoa is great)
  5. 2 c chicken stock (low sodium)
  6. 1/2 t salt
  7. 1/4 t pepper
  8. 1 c milk (cashew)
  9. 1/2 c parmesan cheese
  10. 1 t parsley, chopped (optional)
Instructions
  1. In a large skillet, heat the oil and add garlic. Cook until the garlic starts to brown.
  2. Add pasta, salt, pepper, butter, chicken stock and milk. Stir and bring to a boil.
  3. Reduce heat and simmer for 20 minutes or until pasta is tender.
  4. Remove from heat and stir in parmesan cheese.
  5. Add parsley or cilantro or whatever you like on your pasta.
