  1. 1 cup whole wheat pastry flour
  2. 1 tablespoon cornstarch
  3. 1/2 teaspoon baking soda
  4. 1/4 teaspoon salt
  5. 3/4 cup miniature chocolate chips
  6. 4 tablespoons cocoa powder
  7. 1 large egg
  8. 1/2 cup Greek yogurt
  9. 1/4 cup melted coconut oil
  10. 1 teaspoon vanilla extract
  11. 1/2 cup brown sugar
  12. 1 cup mashed ripe bananas
  1. Preheat the oven to 350 degrees.
  2. Generously coat a muffin tin with cooking spray and then dust the cavities with cocoa powder.
  3. In a small bowl, toss together the flour, cornstarch, baking soda, salt, cocoa powder, and chocolate chips. Stir.
  4. In another bowl, whisk together the egg and Greek yogurt. Stir in the melted coconut oil,vanilla extract, brown sugar, and the mashed bananas.
  5. Combine wet and dry ingredients and mix until JUST combined. Over-mixing results in denser muffins.
  6. Bake for 18-23 minutes or until a toothpick comes out clean when inserted into the center of a muffin.
