Ingredients
  1. 1 lb chicken, cut into cubes
  2. 1/3 c diced onion
  3. 2 c chicken stock
  4. 1 bag (15 oz) frozen mixed veggies
  5. 1/4 t pepper
  6. 1 t garlic powder
  7. 1/2 t thyme
  8. 1/2 c brown rice flour, or similar
  9. 1 1/2 c unsweetened cashew milk
  10. 1 can buttermilk biscuits
Instructions
  1. Season the chicken chunks with salt & pepper, bake at 350 for about 20 minutes or until cooked through.
  2. In an oven safe pan, cook the onion until soft.
  3. Add frozen veggies, chicken stock, thyme, garlic powder and pepper.
  4. Bring to a boil, then simmer for about 5 minutes.
  5. Sprinkle in the flour until incorporated, then add the milk while stirring constantly.
  6. Add the diced chicken and mix well.
  7. Place the biscuits on top of the pot pie and bake for 20 minutes at 350 degrees or until the biscuits are golden brown.
