Ingredients
  1. 3 T butter
  2. 2 T oil (I use safflower)
  3. 3/4 cup onion, diced
  4. 1/2 cup carrots, diced
  5. 1/2 cup celery, diced
  6. 4 cloves garlic, minced
  7. 1t salt
  8. 1/2 t black pepper
  9. 1/3 cup flour (I use brown rice)
  10. 4 cups low sodium chicken broth
  11. 1 cup milk (I use unsweetened cashew milk)
  12. 1/2 cup whipping cream
  13. 1 cup cooked white meat chicken, cut into small bites
  14. gnocchi (I used Trader Joe's sweet potato gnocchi)
Instructions
  1. In a large soup pot heat the butter and oil together over medium heat. Add onion, carrots, celery and garlic. Cook until tender over medium-low heat about 10 minutes, stirring often.
  2. Sprinkle the flour into the pot and stir into the vegetables, cook 3 minutes, stirring often. Stir in the chicken broth 1 cup at a time, followed by the milk and cream.
  3. Add the cooked chicken. Bring up to a simmer and maintain for 20 minutes stirring often. Season with salt and pepper, more or less to taste.
  4. Cook the gnocchi separately according to package directions, then add them to the soup.
Notes
  1. This is an Olive Garden copycat recipe with some changes.
