  1. 3 Tablespoons butter
  2. 1 cup diced onions
  3. 1/4 cup brown rice flour (or flour of your choice)
  4. 2 cups chicken stock
  5. 2 cups So Delicious unsweetened coconut milk (or milk of your choice)
  6. 1 1/2 pounds yellow potatoes (or potato of your choice)
  7. 1 cup shredded cheddar cheese
  8. 1/2 cup plain Greek yogurt (or sour cream)
  9. 1 teaspoon salt
  10. 1/2 teaspoon black pepper
  1. In a large pot, melt the butter. Add diced onion and saute until soft (about 5 minutes).
  2. Sprinkle the flour in and stir until combined.
  3. Next, stir in the chicken stock.
  4. Add the milk and potatoes. Cook until simmering but not boiling.
  5. Reduce the heat and cook for 10-15 minutes or until the potatoes are soft.
  6. When the potatoes are soft, stir in the cheese and yogurt (or sour cream), salt and pepper.
  1. Instapot variations
  2. Add the butter, diced onions, brown rice flour, chicken stock, milk and potatoes to the Instapot. Seal the steam vent and hit the "soup" button. When it's done cooking, add the shredded cheese, yogurt, salt and pepper and stir.
