  1. 1 c coconut oil
  2. 3/4 c sugar
  3. 1 t almond extract
  4. 2 c flour
  5. 1/2 t baking powder
  6. 1/4 t salt
  1. 1/2 c powdered sugar
  2. 1 t almond extract
  3. 1/2 to 1 T water
  1. Preheat your oven to 400 degrees.
  2. In a mixer, cream together the coconut oil, sugar and almond extract.
  3. In a separate bowl mix together the flour, baking powder and salt.
  4. Add the dry ingredients slowly while your mixer is on.
  5. Scoop the dough with a small ice cream scoop or roll into balls and place on pan. Flatten slightly.
  6. Bake for 7 minutes. They won't brown.
  7. Put a few slices of almonds on top of each cookie.
  8. For the glaze, combine the powdered sugar and almond extract. Slowly add the water until the glaze is thin enough to spoon onto the cookies.
  1. I used bread flour, a half and half mixture of white and whole wheat. For sugar I used a mixture of cane sugar and xylitol.
